Monosodium glutamate (also known as MSG) is used to enhance the natural flavors in food.
MSG doesn't have its own flavor, but when you add it to food, it gives it savory taste.

Glutamate is an amino acid that your body can make on its own. It also occurs naturally in tomatoes, mushrooms, walnuts, Parmesan cheese, and some other vegetables and protein foods.
That is one reason why you will find that these are common ingredients in a lot of dishes - they enhance the flavor of the food.
Although MSG has been approved for use in food, there is a lot of controversy about whether or not it is healthy and safe to use.
MSG is neither pure nor natural. It is made artificially when protein is hydrolyzed.
When you hydrolyze vegetable protein, the glutamate becomes "free." The free form of glutamate is an excitotoxin.
Excitotoxins are hazardous to your health. They can over-excite and over-stimulate your brain cells until they are severely damaged. This over stimulation can even cause your brain cells to die!

The glutamate in MSG has a different chemical structure from the glutamate that your body makes and that occurs naturally in food.
Any chemical structure that does not occur naturally in nature can be very damaging to your body.
MSG is a very addictive food additive. That is one of the main reasons why manufacturers love to use it in the foods they make.
Once you buy their products and enjoy that irresistible savory flavor, you will find yourself coming back for more. Resisting those cravings may pose quite a challenge.
Monosodium glutamate is an inexpensive additive. Manufacturers use it to improve the taste of their foods without having to use more costly ingredients. That means higher profit margins for them.
And what do you (the consumer) get?
Savory, flavor-rich foods that trick your brain into thinking you are eating something nutritious. Never mind the fact that most packaged foods are sadly lacking in nutritional value.
MSG stimulates your appetite. It is scientifically proven to cause weight gain. Eat it often enough and it will cause your waistline to expand.
Too much fat in your tummy area (abdomen) will put you at a higher risk for a stroke, a heart attack, high cholesterol and diabetes.
